Thoroughly clean, wash and drain fresh spinach. Cut into small pieces as you like - alternatively, let frozen spinach thaw, squeeze out well and cut into small pieces if necessary. Peel the onions and cut them into rings. Peel the ginger and garlic cloves and chop finely (in a lightning chopper).
Heat the oil in a larger pan. Add onions and fry brown over medium heat. Add the ginger and garlic and fry for about ½ min. Add the cayenne pepper, cumin, turmeric and coriander and fry for about 1 minute over high heat.
Add the spinach and let it collapse. Add plenty of salt and cream. Cover and let the dish simmer over medium heat for 5-10 minutes.
Caution: The spinach must not overcook. It should keep its green color.
