Peel, wash and dice the potatoes. Place in a large saucepan, add the vegetables, diced ham, herbs and vegetable stock. Fill everything up with hot water so that the water is at least 1 cm above the vegetables. Add a little salt.
Put the minced meat in a bowl, add the paprika powder, minced meat seasoning, egg and breadcrumbs and mix everything together. Form small balls. When the soup starts to boil, add the balls. Let the soup simmer for 20-25 minutes, season if necessary.
