Instructions

  1. Wash the tomatoes, cut out the roots and cut into wedges. Clean and chop the spring onions. Wash the basil leaves, chop them up and add to the tomatoes. Wash, spin and chop the spring herbs such as wild garlic and dandelions. Then also add to the tomatoes. Dilute the elderflower vinegar with water as required and drizzle over it. Add the oil in the same way and season everything with salt, pepper and sugar. Then finally fold in the cream cheese.
  2. The salad is a nice side dish and tastes great with bread and butter even on hot days.
  3. I made this salad with my herb potato salad.
