Peel the garlic, chop it and stir in the oil, let it steep for a moment. Wash the meat, pat dry, brush with 2 tablespoons of garlic oil and let rest for at least 10 minutes.
Halve the tomatoes and cut into slices. Peel the onion and cut into fine rings.
Clean, wash, drain and roughly chop the rocket, mix with mayonnaise and mustard, season with salt, pepper and sugar.
Grill the rump steak in the hot pan (also great on the charcoal grill) for 3 - 4 minutes on each side.
In the meantime, halve the ciabatta and cut each one open. Brush the cut surfaces with the rest of the garlic oil and fry / grill for about 2 minutes on each side.
Brush the bread with rocket cream, top with onion rings and tomatoes. Cut the meat into slices, spread on top, salt and pepper.
