An appetizing stew with chicken, pumpkin, and potatoes is a fairly simple and very tasty dish. Pumpkin fits perfectly into the classic union of chicken and potatoes, making the stew healthier and brighter in taste.
We wash the pumpkin, peel and the inner part with seeds, and cut it into small cubes. Peeled, I got 200 g of pumpkin.
Peel the potatoes and cut them into small cubes (approximately like a pumpkin).
Peel the onions, rinse and cut into small cubes.
In a deep frying pan preheated with vegetable oil, fry the onions over low heat until soft, about 7 minutes.
Cut the chicken fillet into small pieces.
Add a chicken fillet to the onion.
Fry over medium heat for 2-3 minutes, until the color of the chicken meat changes.
We send pumpkin and potatoes to the pan for a chicken fillet with onions.
Pour in 150 ml of water and add salt.
Stir the contents of the pan and bring to a boil.
Simmer everything over low heat for about 15 minutes, until vegetables are cooked. If after that there is still liquid in the pan, then open the lid, increase the heat and cook for 2-3 minutes until the excess liquid evaporates.
We wash the green onions, dry them and chop finely. Put the stew with chicken, potatoes, and pumpkin on plates, sprinkle with green onions and serve.
