Instructions

  1. Peel the cucumber and cut in half lengthways. Core the inside with a spoon and then cut into pieces approx. 1 cm in size.
  2. The minced meat is fried in a little oil and seasoned with salt and pepper. Add the cucumber pieces and sear them with the minced meat for about 3 - 5 minutes. Deglaze with the canned tomatoes and vegetable stock. Simmer over medium heat for about 20 minutes until the cucumbers are translucent.
  3. At the same time, put on the rice and prepare as usual.
  4. Add vinegar, sugar and dill to the cucumber and season to taste. The vinegar should come through with a slightly sour note, otherwise add a little vinegar. Cook for about 10 minutes on a low heat.
  5. Arrange the stewed cucumbers on plates and stir in a little sour cream. Add the rice and serve immediately.
  6. 150 Kcal per serving.
