Beat the egg whites until stiff. Sift the powdered sugar and stir in the vanilla sugar. Pour into the egg whites, stirring constantly, until the vanilla sugar has dissolved. Carefully fold in the desiccated coconut, ground almonds and chocolate sprinkles.
Preheat the oven to 140 degrees. Line baking trays with parchment paper and use 2 teaspoons to put small heaps of dough on the tray. Bake for 12-15 minutes.
