Dice the onions very finely. Quarter the tomatoes, remove the seeds and juice, then dice finely (goes well with the Nicer Dicer).
Mix the cured ham, the onion and the tomatoes, season with pepper and salt (be careful with salting, the ham is often quite salty!), If you like, add a little cayenne pepper.
Spread the mixture over the bread slices.
Fry the fried eggs and place them on the bread slices.
Serve with the sliced pickles.
