Instructions

  1. Toast the bread slice and place it on a plate. Brush with butter and top with the boiled ham. Cut the tomatoes into slices, spread them on the ham, season with salt and pepper.
  2. Place the basil leaves on top of the tomatoes. Cut the mozzarella into slices, arrange on top of the basil and sprinkle with cayenne pepper.
  3. Heat the oil in a pan and place two round dessert rings in it. Open an egg in each ring and fry over a low heat with the lid on to fried eggs.
  4. Once the egg white has set from above, lift the dessert rings from the pan onto a large plate with a damp cloth. (The fried egg will stick to the ring)
  5. Hold the rings with the rag and remove the fried eggs from the rings with a blunt knife.
  6. Arrange the two fried eggs on the sandwich, sprinkle with chilli salt and chives, garnish and serve.
