Halve the papaya, scrape out the seeds. Remove the pulp with a spoon, but leave an edge of approx. 1 cm. Chop the pulp, clean, wash and quarter the strawberries.
Stir the quark with the reduced-fat cream and lemon juice until smooth and add mineral water and sweetener according to consistency and taste. Mix the papaya meat with half of the strawberries and the quark and fill the fruit halves.
Spread the remaining strawberries on top, garnish with the mint sprig and coconut flakes and serve.
