Instructions

  1. For the mousse, soak the gelatine in cold water. Meanwhile, stir in the strawberries, lime juice, strawberry syrup, vanilla sugar and natural yoghurt. After a few minutes, squeeze out the gelatine and dissolve it in a water bath or in the microwave.
  2. Put a spoonful of the strawberry mixture into the gelatine and stir. Repeat this twice. Now add the gelatine completely to the mixture and place in the refrigerator to gel.
  3. Whip the cream until stiff and fold in airy when the strawberry mixture begins to gel. Fill into glasses or into a bowl from which you can easily cut cams. Leave to gel in the refrigerator for at least 6 hours.
  4. For the lime strawberries, wash the strawberries and remove the stalks. Then quarter or eighth depending on the size. Squeeze the lime and mix the juice with the sugar and water and pour over the strawberries. Let it steep for a few hours.
  5. Serve the mousse with the strawberries, you can decorate with cream, chocolate sprinkles and lemon balm.
