Instructions

  1. For the biscuits (of course the recipe also works with purchased biscuits!), Stir the egg yolks with powdered sugar until frothy. Beat the egg whites with sugar until they are firm and shiny. Raise the egg whites onto the egg yolk mixture, sieve the flour over it and mix everything loosely. If you like, you can also add orange peel or lemon flavor.
  2. Then use a piping bag with a smooth nozzle to spray biscuits onto a baking sheet lined with baking paper (leave a little space!). Depending on the size of the injection, the amount is approx. 20 biscuits. If necessary, sprinkle the biscuits with a mixture of powdered sugar and vanilla sugar. Bake in the preheated oven at approx. 160 ° C with the oven door slightly open for approx. 10 - 15 minutes. Then pull it off the paper relatively quickly.
  3. Stir the QimiQ until smooth and add all other ingredients to taste. Buttermilk can also be used, or more curd cheese. Add flavors according to taste. The cream shouldn`t be liquid! I only use very little vanilla sugar or sugar, as the biscuits are usually quite sweet. But that depends on the individual taste! Just try it!
  4. Refine the orange juice with a dash of raspberry spirit - or leave out the alcohol. Dip the cooled biscuits briefly (do not drown!) And layer them in a mold (if you like, you can line the mold with cling film beforehand).
  5. On top of this is a layer of cream. Strawberries cut into small pieces on top of the cream (slices, cubes as you like), then another layer of biscuits - cream - strawberries. If you prefer something finer, you can puree the strawberries beforehand and stir them into the cream, but then you may need a little gelatine so that the cream is not too runny. As the last layer, spread another cream and decoratively a few strawberries on top.
  6. Put it in the fridge for at least 2 - 3 hours (but preferably overnight) and a great, fresh, light dessert is ready!
