Drain the cherries. Squeeze out the quark in portions in a kitchen towel.
Separate the eggs, mix the quark with the sugar, almonds and egg yolks. Beat egg whites very stiff, fold in carefully. Spread the strudel dough on a kitchen towel. Spread the quark lengthways on one half of the dough and the cherries on the other. Crumble the rusks and sprinkle on the fruit. Roll up the strudel from the cherry side.
Brush the baking tray with butter. Carefully place the strudel on top, brush with the remaining butter and bake at 200 degrees for about 40 minutes.
