Instructions

  1. First squeeze the juice of half a lemon and pour it into a small container.
  2. Halve the avocado and remove the stone. Then carefully remove the pulp with a spoon and cut into small cubes with a knife. Immediately add these to the container with the lemon juice and mix them - this way they won`t turn brown.
  3. Halve the washed tomatoes and also cut into small cubes. Cut the spring onions, including the greens, into fine rings. Also cut the ham into small cubes.
  4. Put all ingredients and the cottage cheese in a bowl, season with salt and pepper and mix.
  5. I let the salad stand a little longer before I serve it. You can use the peel of the avocado and pour the mixture into it and then sprinkle with the chopped parsley.
  6. Perhaps a freshly baked wholemeal bread is enough and a nice starter or a small snack for in between is ready.
