Wash and dab tomatoes, cut off small lids. Cut all lids into fine cubes. Hollow out tomatoes with a small teaspoon.
Mix together the cream cheese, parmesan, salad spice mix, diced tomatoes and chopped pine nuts. Use a piping bag with a small perforated nozzle to inject the filling into the hollowed out tomatoes.
Arrange tomatoes on a platter, drizzle with olive oil and garnish with chopped parsley.
