Cut off the lid of the pumpkins. Remove cores and fibers. Remove and chop the pulp and mix in a bowl with the mozzarella, shrimp, creme fraiche and spices. Pour the mixture into the hollowed out pumpkins and place in a baking dish. Bake in the oven at 175 degrees for about 50 minutes.
It goes well with fresh white bread and a dry Pinot Gris.
