Instructions

  1. For the filling, finely chop the onion and garlic. Mix the cheese, salt and pepper together.
  2. Cut the pork fillets lengthways, but do not cut through them. Fill the pork tenderloin with the cheese mixture. Press the pork fillets into shape, wrap them with bacon and brush with olive oil. Place in a baking dish and fry in a preheated oven at 175 ° C for about 30 minutes. Heat the meat to a core temperature of approx. 60 ° C. Take out of the oven and let rest for 10 minutes.
  3. For the mashed sweet potatoes, peel the sweet potatoes and cut them roughly into pieces. Cover and cook in boiling salted water for 20-25 minutes. Then drain and let steam briefly in an open saucepan over a mild heat.
  4. Briefly bring the milk, butter, a little salt and spices to the boil in another saucepan. Finely mash the sweet potatoes in a pot with a potato press or a potato masher. Stir in the still hot milk mixture with a whisk until you have a fluffy, creamy mashed potato.
  5. In the sequence, everything should be ready to the point at the same time.
