Knock the schnitzel flat and season with salt and pepper on both sides. Then spread thinly with tomato paste. Cut the mozzarella into eight slices and place two slices on each schnitzel. Sprinkle with chopped fresh basil (amount to taste). Now fold the schnitzel together and secure with toothpicks (or a similar tool).
Carefully turn the packets in a little flour. Heat the oil in a pan and fry the schnitzel in it for 6-8 minutes over a low heat.
Baguette and salad or mashed potatoes and vegetables go well with it.
