Wash the turkey schnitzel and pat dry. Cut open like a bread roll with a large knife to make two schnitzel. Brush each schnitzel with a little Skyr, cover with a slice of ham and close.
Season on both sides with pepper, paprika powder and a little salt. Cut the hand cheese into small pieces. Sear the schnitzel on both sides. Turn the stove to half heat. Add the skimmed milk and pieces of hand cheese, put a lid on the pan and let it steep for about 5 minutes over a low heat.
Turn off the stove and add the remaining skyr to the sauce. Season to taste with paprika and pepper. There is probably enough salt from the hand cheese.
