Instructions

  1. Wash and chop the wild garlic, mix with the cream cheese and season with salt and pepper.
  2. Grind or grate rusks.
  3. Flatten the schnitzel a little and season. Spread the wild garlic cream cheese and fold it up, secure with a wooden skewer.
  4. Whisk eggs. Turn the schnitzel in the flour, pull through the egg mixture and roll in the rusk crumbs.
  5. Fry both sides in the heated clarified butter until golden brown.
  6. Remove and drain on kitchen paper.
