- Wash and chop the wild garlic, mix with the cream cheese and season with salt and pepper.
- Grind or grate rusks.
- Flatten the schnitzel a little and season. Spread the wild garlic cream cheese and fold it up, secure with a wooden skewer.
- Whisk eggs. Turn the schnitzel in the flour, pull through the egg mixture and roll in the rusk crumbs.
- Fry both sides in the heated clarified butter until golden brown.
- Remove and drain on kitchen paper.
