Mix the flour with the spices, mix honey and yeast with water and add to the flour mixture with the oil. Knead well for 10 minutes and cover in a warm place for 20 minutes.
Put pumpkin seeds and apricot cubes (you can also leave out) into the batter. Shape into a ball, brush with milk, place on a greased baking sheet and let rest covered.
Put the bread in the cold oven on the second rack and place a bowl of water on the oven floor. Bake for 60 minutes at 200 degrees. Sprinkle with a little water after baking.
