g bacon, fat, smoked, finely diced

large onions, cut into thin wedges

piece (s) garlic, Chinese if possible

kg tripe, ready-cooked and cut into strips

potatoes, peeled and cut into cubes

bay leaves

tablespoon paprika powder, noble sweet

tablespoon caraway powder

teaspoon thyme, amount to taste

teaspoon tarragon, fresh or dried

teaspoon marjoram, fresh or dried

ml meat broth or bone broth

Instructions
Leave out the bacon and fry the onions with the garlic until translucent over a low heat, add the potatoes and the tripe. Mix in all the spices, add meat stock and simmer for about 30 minutes, season to taste and serve hot.
