Instructions

  1. Peel the onion and potatoes, dice the onions, and also cut the potatoes and ham into very small cubes.
  2. Cut the chilli pepper into fine strips, core depending on the heat.
  3. Heat the olive oil in a pan, fry the onion and ham cubes, add the potato cubes and fry with them. Cover the pan and let everything cook over low heat for about 10 minutes, stirring occasionally.
  4. Season with salt (or a little granular broth) and chilli, pour over the white wine.
  5. Cut the sugar loaf into fine strips or patches, add, stir and let cook, covered, for another 10 minutes.
  6. Season with balsamic vinegar and / or lime juice.
  7. Tastes warm as a vegetable dish, also as a side dish e.g. with veal or poultry. It can also be served lukewarm or cooled as a salad.
  8. Sugar loaf is a winter salad that resembles Chinese cabbage in appearance (but not in taste!). It belongs to the Epsom salads. As an alternative, endive salad or chicory (Brussels lace) can also be used. Chicory, however, has a slightly different consistency. The bitterness is softened during cooking, so the salad does not have to be treated beforehand to remove the bitter substances.
