Instructions

  1. For the salad, clean and wash the vegetables. Halve the snow peas diagonally and cook in boiling salted water for about 3 minutes, rinse under cold water and drain in a sieve. Cut the mushrooms into thin slices, halve the cherry tomatoes. Arrange the snow peas, mushrooms and cherry tomatoes decoratively on 4 plates.
  2. For the dressing, mix together the oil and vinegar, season with salt, pepper and sugar.
  3. For the toasted flakes, roast the oat flakes in heated oil, place in a bowl and season with salt, pepper and paprika powder.
  4. Pour the dressing over the salad and sprinkle with the cleaned cress and the toasted flakes.
  5. Crunchy wholemeal baguette or wholemeal toast tastes good with it.
