Eight the tomatoes, remove the core and cut the tomatoes into small pieces. Core the nectarine, cut the pulp into small pieces. Clean the strawberries and spring onions and cut into small pieces or rings. Remove the mint leaves from the stem and chop finely.
Put all ingredients in a bowl and mix together. Salt and pepper. Whisk the olive oil and white balsamic vinegar together, pour over the salad, let everything steep and serve.
