Instructions

  1. Dice paprika, cucumber, onion and tomatoes and place in a salad bowl. Put the corn and beans in a colander, rinse and drain. Mix both with the vegetables. Dice the goat cheese and sprinkle over the vegetables. Now whisk the lemon juice with salt, pepper, honey, tomato paste and Tabasco. Fold in the oil and mix in the yoghurt (I put everything in a small mixer at the end). Finely chop the parsley, stir into the salad sauce and drizzle over the salad. Mix everything well before serving. Tip: If you don`t value goat cheese, you can of course use other types of cheese.
