Wash and pluck the lamb`s lettuce. Cut half of a watermelon into bite-sized pieces. Also cut the feta cheese into small pieces and put everything in a bowl.
For the dressing, mix together juice, honey, oil, balsamic vinegar, cream cheese and chopped lemon balm. Lightly salt and / or pepper as desired.
Pour the dressing over the salad and top with the roasted pine nuts.
