Cut the zucchini, tomatoes, onions and melon into small cubes.
For the dressing, squeeze the lemon, add honey and mustard depending on your taste, season with salt and lemon pepper, finally stir in 1-2 tablespoons of olive oil.
Add the marinade to the diced vegetables and let steep for about 10-15 minutes.
Do not mix too much marinade, as the salad will draw some water through the zucchini.
