Mix the dry ingredients and knead with water and maple syrup for about 10 minutes with the food processor (you can of course also use your hands). Cover the dough and let rise for about 1 to 1.5 hours. The volume should have increased significantly.
Now form 10 rolls with floured hands, cut them crosswise, brush with water or salt water and sprinkle with sunflower seeds if necessary.
Set the oven to 200 degrees top / bottom heat and cover the rolls and let them rise until the oven has reached temperature. Bake on the middle rack for about 18 to 20 minutes.
