Start by “revitalizing” the yeast. To do this, heat the milk to 35-37 degrees, pour sugar and yeast into it. Stir and, covering the cup, for example, with a saucer, wait 10 minutes until the yeast foams the surface. Melt the butter in parallel.
Combine an egg with salt and melted butter in a cup. Then pour in the yeast mass.
And you start adding sifted flour in portions. First stir the mixture with a spoon.
And then move on to manual kneading and finish kneading the dough on the table. Not all flour may be required, it all depends on its quality. The dough turns out to be quite elastic, but soft. Collect it in a ball, place it in a clean cup, cover it first with a film, and then with a towel and leave it warm for an hour and a half.
Pour refined oil into the pan, heat it up and put the finely chopped onion.
Fry until light golden brown.
Spread the minced chicken to the onion and continue frying for another 10 minutes. Season with salt and spices.
Grind the cheese into fine shavings.
After the allotted time, the dough will double its volume. Take it out of the cup, crush it and divide it in half.
Roll one part into a circle with a diameter of about 25-27 cm. Trim the edges on a plate or lid. And immediately transfer it to a sheet of parchment.
Place the fried minced meat in the center with a slide, around which you distribute the cheese shavings with a ring. Leave the edges of the cake (about 1 cm) empty.
Roll out the second part of the dough in a similar circle, but only 1.5-2 cm more in diameter. And you put this second circle on the first. The edges of the circles must match.
Press down on the edges of the circles with a fork. Also crush the dough at the border of the two fillings.
With a knife, make cuts in a circle, as shown in the photo. Then, at each petal, pinch one side and turn it on the edge with the other side up. This prevents the filling from flowing out.
You can, if desired, distinguish between the cap and the petals with a flagellum or a pigtail made of dough scraps. Shake the yolk, grease the surface of the pie and sprinkle poppy seeds on the convex center.
Bake the “Sunflower” pie with chicken at 180 degrees for 25-30 minutes until an appetizing golden brown. Take it out, let it cool and serve.
