  1. The ingredients should be at room temperature, so take them out of the refrigerator about an hour before baking.
  2. Mix the butter with the brown sugar, vanilla sugar and a pinch of salt until frothy. Slowly pour in the eggs one after the other and stir in the sour cream and cream cheese. Then mix the flour with the baking powder and cinnamon in a separate bowl so that everything is evenly distributed. Sift the flour mixture over the mixture and fold in.
  3. Peel the apple, dice as finely as possible and stir into the mixture as well. Now crumble the spiced speculoos and fold in.
  4. Pour the dough into a greased, round springform pan and bake in the oven preheated to 175 ° C for 50 - 65 minutes. Please do not bake for too long and repeatedly make a stick test so that it does not dry out. If the cake gets dark in the meantime, simply cover it with aluminum foil.
  5. When the cake is ready, let it rest for 10 minutes and then dust it generously with powdered sugar. Then cut into pieces and serve each with a large scoop of vanilla ice cream.
  6. I always use a round 24 or 26 (silicone) mold and the cake is the perfect height for us.
