Preheat the oven to 175 ° C (top / bottom heat). Grease a large loaf pan or line it with baking paper.
Put a handful of flaked almonds aside to sprinkle the cake, coarsely chop the rest. Combine all dry ingredients except sugar and stevia in a bowl. The amounts and proportions of sugar and stevia can be varied at will.
Mix all remaining ingredients in a second large bowl with a hand mixer. Add the dry ingredients and work everything into a dough - the dough is quite runny, but will rise nicely in the oven.
Put the dough in the baking pan and bake for about 1 hour. You can also bake muffins from the (remaining) batter. The baking time is then approx. 20 minutes. For me, the recipe is enough for a medium-sized loaf pan and about 6 muffins.
