Peel the ginger and cut into thin slices. Slit the vanilla pod lengthways, scrape out the vanilla pulp and place in a saucepan with the vanilla pod, ginger slices, cinnamon stick, cloves, cardamom pods and allspice seeds. Add star anise with raisins, almonds, orange and lemon peel and juice, and sugar. Pour on the red wine.
Cover and simmer for 30 minutes and pour through a sieve. Mix in the rum and pour the drink into heat-resistant glasses.
This drink heats up a lot. If you like it a little gentler, reduce the rum, leave it out entirely or mix it with tea.
