- Clean and wash the leek and cut into 0.5 cm rings. Blanch briefly in water, rinse in cold water and place in a bowl.
- Heat the oil in a pan and add all the other ingredients. Bring to the boil until it foams properly and the sugar has dissolved.
- Pour immediately over the leek. Leave to cool for 30 minutes at room temperature, then put in the refrigerator overnight.
