According to this recipe, sweet pilaf is a very satisfying dish, rich in flavors and colors. Pilaf is rich in a set of dried fruits, it contains poppy seeds, candied fruits and unusual spices. Such sweetish rice is a real decoration of the table.
Prepare all the necessary products for making sweet pilaf with dried fruits and poppy seeds. During cooking, you will need 500 ml of boiling water. Peel and wash the carrots. If a spice like cumin is not to your taste, then exclude it. You can use spices that are closer to your taste. You can add nuts to the finished dish to your taste.
Rinse dried apricots, raisins and prunes under running water and pour boiling water over. Rinse the poppy seeds and also pour boiling water.
Cut the peeled carrots into quarters.
Cut candied fruits (I have candied fruits from orange peels) cut into small pieces.
Heat vegetable oil in a skillet, add chopped carrots and candied fruits.
Lightly fry the carrots with candied fruits.
Drain the water from the dried fruit. Cut dried apricots into small pieces. Add dried apricots and raisins to the skillet.
Add sugar there. Brown unrefined sugar can be used. Stir again.
Fold the poppy into a fine strainer and let the water drain. Add the poppy seeds to the skillet. Fry all foods for another minute, stirring constantly.
Then transfer the contents of the pan to a saucepan in which the sweet pilaf will cook. Add washed rice (I have basmati rice). Add cumin and barberry.
Pour boiling water over the rice. If the rice is round grain, then less water can be taken. Salt. Bring water to a boil, cover the pan with a lid and cook rice with dried fruits, candied fruits and poppy seeds for 20-30 minutes.
Finely chop the prunes and add to the pilaf.
Stir the pilaf with the prunes.
Sweet pilaf with dried fruits and poppy seeds is ready.
