Peel the potatoes, onions and carrots and cut into small pieces.
Now put a splash of olive oil in a saucepan and heat it up. When it`s hot, add the onion and fry for 3 minutes. Add the sweet potatoes, carrots and a little salt to the saucepan and fry for 5 - 7 minutes over a medium heat. Then add the freshly grated ginger (if there is no fresh ginger available, it can also be used in powder form) and a pinch more salt. Stir. Add enough water to cover the ingredients (possibly a finger`s breadth more water), cover the pot and let it boil for about 20 minutes.
When the vegetables are soft, puree them with a blender and serve.
Tip: You can use a dash of cream and a handful of chia seeds for decoration.
