Instructions

  1. Peel the sweet potatoes, carrots and onions. Cut sweet potatoes and carrots into pieces approx. 2 by 2 cm, onions into small cubes.
  2. Cook the beluga lentils according to the instructions on the packet.
  3. Fry the onions in a little butter when they are lightly roasted, caramelize in honey, add sweet potatoes and carrots, fry briefly and then cover with warm salted water and cook for 15 minutes.
  4. In the meantime, clean the beans and cut off the ends. Cook the beans in salted water for 5 minutes.
  5. Fry the beans and beluga lentils together in the pan in butter and season with salt and pepper.
  6. Drain the sweet potatoes and carrots, catch the water. Add about 50 ml of water and the cream to the sweet potatoes and carrots and mash. Season the mash with salt, pepper and honey, add the remaining butter.
  7. Arrange everything together (see picture).
  8. Delicious, for example, with medallions and steaks, but also as a vegetarian dish with goat cheese.
