Instructions

  1. Put the oil in a saucepan and fry the diced onions together with the garlic until the onions have a nice golden color. Be careful not to burn the onions! Now also add a pinch of chilli flakes, sweet potatoes and carrots to the pot and sauté briefly. Carefully dose the chilli flakes! If you don`t like it too spicy, add a little less chilli flakes and season them later.
  2. Add enough vegetable stock to just cover the vegetables. Cook for 15-20 minutes until the potatoes and carrots are tender. Chop everything up with a hand blender.
  3. If the soup is a little too thick, just add a little water. Just add salt, pepper and possibly more chilli flakes to taste. Serve the soup with fresh bread.
