- Peel the potatoes and cut into 8 mm thick sticks with a sharp paring knife. Soak the fries for 1 hour, then dry them.
- Put the cornstarch in a large freezer bag and add the fries. Seal the bag and spin evenly so that all of the fries are evenly dusted.
- Then fry the fries in a deep fryer for 5 minutes at 140 degrees Celsius.
- Drain the fries and fry again for 5 minutes at 170 degrees Celsius.
- When deep-frying, make sure that there are not too many fries in the basket, otherwise they will stick together and not get crispy.
- Before serving, dust with a little salt and, if you like, with paprika powder.
