Instructions

  1. Peel the sweet potatoes and cut into fries approx. 1 cm thick. Put these in a large bowl with cold water and leave them covered overnight.
  2. Preheat the oven to 230 ° C top and bottom heat. Drain the sweet potato sticks and dab them with a cloth. Fill a large plastic bag with 2 tablespoons of cornstarch and add the sweet potato sticks. Close it so that there is a lot of air in the bag and then shake it vigorously. The fries should be evenly covered with starch.
  3. Put the sweet potato sticks back in the bowl and turn them in the smoked paprika powder. It is important that no salt is added yet! Beat the egg white with the tip of a knife with a hand mixer until stiff, add to the sweet potatoes and carefully fold in with your hands. Brush a piece of baking paper with oil and place the sweet potatoes on top with enough space between them. In no case lay too close or on top of each other!
  4. Bake the fries for 15 minutes on the middle rack at 230 ° C top / bottom heat. Turn after 15 minutes, again making sure there is enough space. Bake for another 15-20 minutes, until the fries start to brown.
  5. When the sweet potato fries are brown enough, turn off the oven and leave the door slightly open for a few minutes. Now the crispy sweet potato fries can be seasoned with coarse salt, pepper and chilli depending on your taste.
