- Scrape the peel of the sweet potatoes with a knife. Grate the potatoes. Wash, peel and grate the carrot. Peel and dice the onion and garlic.
- Put the grated potatoes, grated carrots, onions, garlic, eggs and potato flour in a bowl and mix well. Season with salt, pepper and nutmeg.
- Shape the mixture into hash browns and fry in the oil.
