Peel the sweet potato and cut into 3 mm thick slices. Place aluminum foil or baking paper on a tray, then brush some oil on it and sprinkle lightly salt over it. Place the sweet potato slices on top.
Mix the goat`s cream cheese with ajvar in a bowl, add salt and pepper if necessary. Chop the rosemary needles very finely and fold under. Beat the egg white with a pinch of salt until very stiff and fold into the cheese mixture. Spread on the sweet potato slices (as much or as little you like) and bake in the oven at 200 degrees for 10 minutes.
