Instructions

  1. Clean and wash the leek and cut only the white into rings. Peel and dice the sweet potatoes. Peel and core 2 pears and cut into pieces. Sweat the leek rings in hot oil. Add the potato cubes and fry with them. Pour in the vegetable stock. Add the pear pieces, bring to the boil and simmer until the sweet potatoes and pears are soft. Puree the soup, stir in the cream and remove from the heat. Season to taste with salt & pepper. Wash the rest of the pear, cut in half, core and cut into wedges. Arrange the soup in plates and serve garnished with pear wedges.
