Wash and clean the tuber thoroughly. Then cut into 0.5 - 2 cm thick slices.
Toast the slices of sweet potato two or three times (depending on the toaster) on the highest setting so that they turn golden brown or have the consistency you want.
In the meantime you can prepare your ingredients for the topping - simply cut the feta into small pieces and wash the lamb`s lettuce. For the avocado mousse, simply mash the avocado with a fork and add a little lemon juice if necessary.
When the toast has the desired consistency, brush with the avocado and top with feta and lamb`s lettuce. Depending on your needs, you can sprinkle the sweet potato toast with salt, pepper and chilli flakes and your sweet potato toast is ready!
