Sprinkle the roast with a little salt, pepper and paprika on all sides and place in the ceramic pot. Then drizzle the maple syrup evenly over the top and coat the top of the roast with the mustard. Finally, pour the brown sugar over the dish. Cover. The braising time is approx. 4 hours at the highest level (HIGH) and 5 - 6 at the medium level (MEDIUM).
In order to prepare a tasty sauce, pour the resulting roast liquid through a sieve into a separate saucepan. Meanwhile, keep the roast warm in the crock pot on the lowest setting. Add the cream, bring to the boil and stir in the sauce thickener with a whisk. Let simmer for about 1 - 2 minutes and season a little if necessary. Serve the sauce with the roast.
