Bring the milk to the boil, add the semolina, sugar and salt and bring to the boil again while stirring. Then set aside and let it soak for 5 minutes so that the mass thickens nicely.
When the semolina has cooled down a bit, mix in the quark and form a buffer with your hands (diameter approx. 6 - 7 cm). Fry these in a pan with a little fat on both sides until golden yellow. If you want, you can sprinkle the pancakes with cinnamon sugar.
