Halve the carrots and cut into thin slices. Cut the onions into fine pieces. Quarter the peppers and cut into fine strips. Sweat peppers, carrots and onions, add the brown sugar and wait until it is liquid.
Add the vinegar, orange juice, pineapple juice, chilli, ketchup and garlic. Let everything cook until the spiciness of the vinegar is bearable for personal taste. Add a little more orange juice or vinegar to taste.
Finally, thicken with the cornstarch mixed in a little water. If desired, bamboo shoots and palm hearts can also be added.
