Instructions

  1. Thaw spinach leaves, drain really well in a colander. Possibly help with a spoon to drain the spinach really well. Then chop it up with a knife.
  2. Mix the eggs with the sugar until creamy, then slowly pour the oil into the mixture and stir in the flour and baking powder. Then stir in the chopped spinach.
  3. Preheat the oven to 180 ° C top / bottom heat.
  4. Grease a springform pan or line it with baking paper and pour in the batter. Bake on the middle rack for 40 minutes.
  5. After baking, let the cake cool down well and then cut it in half. Crumble the top half.
  6. Now whip the cream with the vanilla sugar and cream stiffener until stiff. Then stir in the mascarpone.
  7. Stir in finely chopped strawberries (if necessary, keep a few half strawberries as decoration) and then spread them on the bottom. Then distribute the crumbs of the other half on the cream and decorate with strawberries as desired.
  8. I baked the cake for Easter, so I decorated it with a few chocolate carrots.
