Wash the chard leaves and cut into strips, also cut the stalks into pieces approx. 1 cm wide. Bring water to a boil in a large saucepan with approx. 2 tablespoons of lemon juice and first add the chopped stems, after approx. 3 - 5 minutes add the cut leaves and cook for about 2 minutes. Skim off the chard and rinse with cold water.
Put the Swiss chard in a salad bowl and crumble the cheese over it. Add 4 tablespoons of olive oil and 2 tablespoons of vinegar, as well as a few squirts of lemon juice (this makes the chard more digestible) and a crushed clove of garlic, season with salt and pepper and mix. Cover and leave to stand in the refrigerator for at least 1 hour.
