Instructions

  1. Make a pre-dough from 200 g flour, 1 g yeast and 130 ml water and let it stand for 12-15 hours at room temperature.
  2. Make a bread dough with the pre-dough and the remaining ingredients. Knead with the machine for 5-10 min. Dough temperature 22-24 ° C. Let rest for approx. 40 minutes. Halve the amount of dough. Make two loaves round and let rise for another hour.
  3. Preheat the oven to 240 ° C. Swath a little before swathing well. Temperature falling to 220 ° C. Bake time approx. 30 minutes. The loaf should have a nice dark crust. After taking it out of the pipe, spray it again with some water.
